Chicken Cashew Salad by Merrily Seely

Served Tuesday 5/5 at the Potluck
1 can chunk pineapple, drained
3 c. diced, cooked chicken
2-3 stalks diced celery
½ c. mayo
½ c. sour cream
2 TBSP apricot preserves
1 tsp curry powder
½ c. coconut
Cashews

Mix all ingredients, adding cashews immediately prior to serving (otherwise they lose their crunch). May be served with rice.

    I had this at the potluck and it was soooo delicious!!! I have been hungry for it since then. Looked on the internet but couldn't find anything even close. Then I decided to check here and see if you posted it! And there it was!!!! Thank's, I just made it using a rotisserie chicken and put it on croissants for a sandwich. So yummy!- Ronda
